- 3/4 cup raw cashews, or combination cashews and walnuts
- 1/2 cup dates
- 3/4 cup unsweetened coconut
- 1/2 cup finely grated carrot
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp vanilla
- Process all ingredients in food processor until a fine meal is formed.
- Form mixture into small (1") balls.
- Refrigerate a few hours or overnight.
Serve alone or with fresh fruit.
