Raw Carrot Cake Balls

Ingredients: 
  • 3/4 cup raw cashews, or combination cashews and walnuts
  • 1/2 cup dates
  • 3/4 cup unsweetened coconut
  • 1/2 cup finely grated carrot
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla
Equipment: 

Food processor

Instructions: 
  1. Process all ingredients in food processor until a fine meal is formed.
  2. Form mixture into small (1") balls.
  3. Refrigerate a few hours or overnight.
